Production and usage of cow milk in 2017

With an average annual milk yield of 6 900 kg (+1.6%) per animal, the 541 000 dairy cows (+0.8%) kept in Austria produced a total of 3 713 000 tonnes (+2.3%) of raw milk in 2017. With 3 313 000 tonnes (+3.6%), the largest share of raw milk produced by cows was provided to manufacturing enterprises (89.2% of the production). Apart from a minor waste, the remaining raw milk was used on farms: 248 000 tonnes (6.7% of the production) were fed to calves or other domestic animals and 114 000 tonnes (3.1% of the production) were used for human consumption.

Production and usage of sheep milk in 2017

In 2017 a total of 12 000 tonnes of raw milk (+11.1%) was produced by 27 400 (+10.5%) dairy sheep held in Austria. The average annual milk yield increased to 438 kg per sheep (+0.5%). 9 100 tonnes (75.8%) of the raw milk produced were used for human consumption either directly or in processed form and 2 800 tonnes (23.2% of the production) for other purposes like feeding. The rest of the production was accounted as waste.

Production and usage of goat milk in 2017

The 35 000 dairy goats (+6.6%) kept in Austria produced a total of 23 100 tonnes of raw milk (+7.0%). The average annual milk yield rose to 660 kg per goat (+0.5%). 20 200 tonnes (87.7%) of the raw milk produced were intended for human consumption only. The remaining 2 600 tonnes (11.3% of the production) were put to other use or recorded as waste.

Methodological notes

The milk statistics determines the raw milk yield of the previous calendar year and provides results relating to the milk used for human consumption or as a feedstuff. The data also forms the basis for further calculations, for instance in conjunction with Supply Balance Sheets or the Economic Accounts for Agriculture.

The survey of the overall raw milk yield and its use for human consumption is conducted in accordance with the criteria and definitions of the Commission Decision of 18 December 1996 laying down provisions for the implementation of Council Directive 96/16/EC. The statistics for milk production and usage is provided annually by Statistics Austria in cooperation with the regional agricultural chambers, relevant professional associations and the Agrarmarkt Austria (AMA).
