The monthly slaughtering statistics provide information on the number of livestock slaughtered in Austria (of domestic and foreign origin) and the amount of meat from bovine animals, pigs, sheep, goats, horses and poultry produced (fit for human consumption). For this purpose, numbers and average carcass weights of individual animal categories from suitable sources are brought together, for example from the consumer health information system (VIS), the Austrian meat control (ÖFK) or the sheep and goat trading exchange (Österreichische Schaf- und Ziegenbörse (ÖSZB)). By using suitable estimation models, slaughtering of pigs, sheep and goats exempted from the obligation to inspect are also integrated.
